MALT
8 Kg (17 lbs, 10 oz) – Pale (Marris Otter) Malt
450 g (1 lbs) – Wheat Malt
225 g (8 oz) – Crystal 60 Malt
225 g (8 oz) – Crystal 120 Malt
245 g (9 oz) – molasses – 60 mins of the boil

HOPS
42 g (1.5 oz) – East Kent Goldings (6.7%) – 60 mins
14 g (0.5 oz) – Fuggles (5.2%) – 15 mins
14 g (0.5 oz) – Fuggles (5.2%) – 0 mins

YEAST
Wyeast PC9097 – Old Ale Blend
Special seasonal release yeast with regular brewers yeast and brett blend.

FERMENTATION
4 weeks @ 20 C (68 F)
6 weeks @ 19 C (66 F) – secondary
Bottle conditioned for a further 6 months+

NOTES
90 min boil time
Had one bottle early on and it was sweet. After it was conditioned for a few more months had another and the brett was starting to come through and cut the sweetness. A rich, malty, strong ale.
